Texas Cattleman’s Caviar Recipe

INGREDIENTS

2 (15oz) can black-eyed peas, rinsed and drained

1 (15oz) can black beans

1/2 cup diced jalapeno

1/2 cup diced red onion

1/4 cup diced green bell peppers

1/4 cup diced red bell peppers

1/4 cup diced yellow bell peppers

1⁄2 cup quartered cherry tomatoes

1 TBS  diced parsley

1⁄4 cup balsamic vinegar

1⁄4 cup olive oil

2 TBS granulated sugar

salt (optional)

 

DIRECTIONS: Stir all the ingredients together and chill overnight. Serve with tortilla chips.
