Several family members are gluten-intolerant so I was thrilled to find this delicious treat.
NO BAKE COCOA BARS
1 cup peanut butter
2/3 cup honey
½ cup coconut oil (do not substitute)
2 cups old-fashioned, gluten-free oats (not the quick kind)
1 ½ cup semi-sweet chocolate chips.
I add a handful of sliver almonds.
Melt together peanut butter, honey and coconut oil. Remove from heat and add oats and chocolate chips. Stir until combined and the chips are melted. Spread in a 9X13 pan lined with foil. Refrigerate until hardened (1-2 hours). Cut into bars and store in the fridge.

Favorite cookie would be from the “World’s Greatest Cookie” recipe I got from the mom of a friend in college. Kind of a mix of chocolate chip and oatmeal.

This is a hard question. I love White Chocolate Macadamia Nut as well as Chocolate Chip cookies. But then, Oatmeal Raisins are hard to beat!
