I loved this cook book! I just bought a really nice new crock pot and have been exploring recipes all over the net. My cousin is doing a year of slow cooking by posting a recipe she has tried daily. I don’t have her ambition and some of the items she cooks have too much fat in them for me. I just started back on Weight Watchers (lost 8 pounds this month!) and I have to find lighter things to cook. This has a lot of great ideas for recipes that can be adjusted to taste.
I have been searching for the roasted cauliflower recipe that works for me and this one is exactly what I wanted. The amount of butter is pretty negligible over the whole recipe but I did substitute skim milk for the whole and I didn’t notice any reduction in flavor. My only complaint is that is doesn’t provide a breakdown of nutritional values, but that is easy to find online. If you are looking for some new ideas, I really recommend this one.
Recipes that worked for me:
Spaghetti Squash – I can’t tell you how many times I have tried to cook this and this simple recipe came out perfect. I did reduce the butter to 1 tablespoon, rather than the 2-4 in the recipe.
Pulled Pork Sandwiches – I used to use a bottled sauce to make mine, but this is so much healthier!
Turkey Loaf – again, I used to use a packaged mix, but this came out better and better for you.
